πŸ₯ž A Breakfast with a Waitlist in Tokyo

πŸ‘‹ Konnichiwa from Tokyo!

I have just started settling into the rhythm of the city and trying to stop my brain from reaching for Turkish phrases every time I need to say something in Japanese.

It's been wild how many Hawaii people are traveling in Japan these days! Last week over Thanksgiving dinner in Honolulu, my friends Melissa, Laurie and I realized we were all headed here on the same flight, yet a day apart!

Of course wherever Melissa goes, amazing foodie experiences follow! Yesterday morning we got to visit a famous little spot in Asakusa called Benitsuru known for their souffle pancakes cooked up on a teppan griddle. They've gone viral thanks to celebrity visitors like Justin Bieber and Katy Perry, but I dare say it's worth the hype.

Same-day reservations are taken for only 120 plates daily and people start lining up as early as 5:30am to pay a deposit in hopes of coming back to get one. Actress Amy Hill was also in our group and they were thrilled to have her add her signature (with "Tutu" of course) to the wall of fame.

If you go, I highly recommend the savory option with slices of thick-cut bacon and eggs layered between the ever-so-slightly sweet pancakes, piled three high then topped off with a rich hollandaise! Wash it down with fresh apple juice made with a homemade compote, which tastes like the perfect apple slushie.

You have to love how places in Japan specialize in one thing and just do it so well. I look forward to many more amazing food experiences in the next two months, but this was a fantastic way to kick things off!

πŸ‘‰ Have you ever queued up for a dish that's gone viral (whether through social media or good fashioned word-of-mouth) and what did you think? Was it worth it?

✨ A unique opportunity

For the past two months, I’ve been part of the inaugural News Creator Corps' Trusted Creator Fellowship cohort, and the program (sadly!) wraps up next week.

We trained in core journalism skills like vetting sources, using public records, fact checking, interviewing, beat reporting and more. It's been eye-opening to discuss how we can apply these skills in our various niches and platforms and to do our part to combat misinformation online.

It has helped me become a more responsible, research-driven storyteller in my travel and food writing.

Applications for the Spring 2026 cohort are now open!

πŸ‘‹ Greetings from Tokyo! The start of this year has already felt so heavy in many ways, and I know many of us are feeling the need to consciously look for moments of steadiness and light where we can. It’s said you have to be lucky to get a clear view of Mt. Fuji, so I took it as an good sign when I got this view from the Shinkansen on my way back to Tokyo. For me, being in Japan and spending time connecting with the language and culture over the past few weeks has offered up many moments of...

πŸ‘‹ Greetings from Kyoto! It’s that liminal space between Christmas and the year’s end where I often forget which day it is. Do you feel it too? When traveling, this effect can be magnified. Without routine, daily habits can be harder to stick to, and there’s always something happening, somewhere to go, or someone to meet. This past week in Kyoto was a reminder of how important being social is for me when I travel solo, even at this stage of life. Somewhere in the middle of all the hustle and...

πŸ‘‹ Greetings from Tokyo! It feels like conversations about cost of living are everywhere right now. Housing is more expensive, travel feels harder to justify, and a lot of people are rethinking what’s actually sustainable. Ten years ago, I shared country-specific cost breakdowns during a long-term trip in order to be transparent about what life on the road actually cost me compared to staying in Hawaii. I’ve been getting similar questions again lately, so this time around I’ve been keeping...
